This course will look at the essential relationship between the quality of our diets and its reflection in our overall health, and the health of our children, and grandchildren. You’ll learn the principles of a traditional diet, as documented by Weston A Price, and how to put that into practice in our world today. You will learn how to design your own diet so that it meets with the levels of nutrition required to maintain your health, using the foods of your choice.
You will learn to plan, prepare, cook and eat a complete nutrient dense diet, and you will learn the following techniques:
- Making broth
- Using raw milk. Kefir, kefir cheese, feta cheese, yoghurt, whey etc
- How to make lard and use traditional fats and oils
- Correctly prepare grains seeds and nuts. Making bread cakes etc
- Making Lacto ferments
- Making fermented drinks and vinegars
Three days focus on Weston Price cooking and preparing nutrient dense food.
During the final two days we will introduce you to the Gut and Psychology Diet (GAPS) and you will learn to prepare and eat GAPS food (a la Dr Natasha Campbell McBride).
The emphasis here is hands on but plenty of theory and discussion as well.
Kay is a teacher who lives what she teaches and has a lot of experience here with both eating Weston A Price and GAPS diets. This could easily be the week of your life that you take to reclaim your health and get you back on a track that feels good.
About Koanga: The Koanga Institute, the Permaculture Research Institute of Wairoa New Zealand, is well known internationally for producing highly competent and knowledgeable students and teachers. The welcome will commence at 4:30pm on Sunday, so please arrive any time from 3:00pm onwards, allowing you time to set up your tent/sleeping space and get settled.

Camping Facilities Included We have set this workshop up so you are able to camp onsite and use our facilities. You’re also welcome to stay somewhere in Wairoa at your own cost, if you prefer. If you are coming from far away and wish to arrive the night before and leave the day after the workshop you will need to let us know. Usually people arrange their own food and their own cooking facilities during this time.
Please note: The Workshop will be confirmed two weeks before it begins. If circumstances prevent the Workshop from going ahead, enrolment fees will be refunded in full.

Cancellation Policy: Students who cancel their place at a workshop with more than three weeks notice will be given an 85% refund, however cancellations after this time can only be refunded 50% of the course fee. Cancellations with less than 48 hours, no refund can be given.
