Kay is absorbed by the questions of how to grow nutrient dense food in today’s world where we must learn to be self reliant, and we must also face the reality that we need highly mineralised soils to grow nutrient dense food, and we need nutrient dense food in order to be healthy!

This workshop will give you an understanding of what nutrient dense food is, and how to test your food, using a refractometer, to see how nutrient dense it is.

You will learn how our food communicates with our bodies, and how the strength and clarity of that communication largely determines our health today and for our children and grandchildren tomorrow.

You will then learn some key principles behind growing nutrient dense food, and how to use that understanding and information to design your best way to grow nutrient dense food, using your choice of a range of methods from bought fertiliser, to doing it all yourself via the compost heap, the biochar burner and more.

You will get to see how the Koanga Institute is doing this in a practical way, and you will get to see how Kay does this on her own site at Kotare Village.  You will do a biochar burn and make a compost heap capable of growing nutrient dense food.

This is a super empowering, exciting and inspirational workshop, both theorectically and hands on practical.  This workshop is unique and leading edge critical knowledge. This workshop can be undertaken as a stand alone workshop or can be combined with Biointensive Gardening to form the Gardening Masterclass

All workshop prices include meals and tent sites with basic facilities.  You’re also welcome to stay somewhere in Wairoa at your own cost, if you prefer. If you are coming from far away and wish to arrive the night before and leave the day after the workshop you will need to let us know. Usually people arrange their own food and their own cooking facilities during this time. 

About Kay Baxter: Kay has been an organic gardener for fifty years! She is a professional seed saver and educator in the fields of Nutrient Dense Food Production and Regenerative Garden Design and Management. She is a researcher in the field of human health in relation to our environment and has authored many books. For many years her research has been focused on the connections between soil health, plant and animal health and human health. Kay has been focused on home gardeners techniques for growing nutrient dense food and it’s because of her that you have access to such amazing seeds today.

Please note: The Workshop will be confirmed two weeks before it begins. If circumstances prevent the Workshop from going ahead, enrolment fees will be refunded in full.

Cancellation Policy: Students who cancel their place at a workshop with more than two weeks notice will be given an 85% refund, however cancellations after this time can only be refunded 50% of the course fee. Cancellations with less than 48 hours, no refund can be given.
