Kay is absorbed by the question of “How to grow nutrient dense food in today’s world?”
This one-day workshop will give you an understanding of what nutrient dense food is, and how to test your food using a refractometer to see how nutrient dense it is.
You will learn how our food communicates with our bodies, and how the strength and clarity of that communication largely determines our health today and for our children and grandchildren tomorrow.
Also included is an introduction to :
- a definition of ‘nutrient dense food’ and the effects on our health
- understanding mineral deficiencies and ways of rectifying them
- the difference between ordinary and high quality compost
- learning how to use a refractometer to measure nutrient density and guide management practices
- the use and benefits of biochar
- self-sufficiency in nutrient maintenance
About Kay Baxter Kay has been an organic gardener for fifty years and is a co-founder of the Koanga Institute in New Zealand. Kay has a vast knowledge of home gardening, nutrient dense food production and the links between regenerative food growing and human health. Kay has authored many books/booklets including:

Kay has been teaching permaculture for many years, and draws upon her experience designing, implementing and managing permaculture systems, specializing in the field of nutrient dense food production – vegetable gardens, orchards, fieriest gardens and animal systems, predominantly in zone 1 and 2. For many years her research has been focused on the connections between soil health, plant and animal health and human health, and has been focused on home gardeners techniques for growing nutrient dense food.

Payment Options: We can offer an option for you to pay off the Workshop in installments; providing that the workshop has been paid for in full no later than 2 weeks before the start date. Cancellation Policy: Students who cancel their place at a workshop with more than two weeks notice will be given an 85% refund, however cancellations after this time can only be refunded 50% of the course fee. Cancellations with less than 48 hours, no refund can be given.
