Grains - Growing, Harvesting, Storing and Cooking
March 5, 2011
Grow and harvest your own grains, then learn how to prepare and cook them for maximum nutrition.
Grains are sacred foods that have supported the development of many civilizations. By growing your own grain you can re-connect with this special food and provide your family with fresh, nutritious food that tastes fantastic! In this exciting 1 day workshop, you'll see the process of growing grain, from planting the seed to harvesting, preparing and cooking. Over the past 10 years, Kay Baxter has grown much of the grain needed to support her family, and has developed low tech techniques that she'll show you so you can do the whole thing at home. You'll learn the basics of growing, harvesting and processing your own grain, and learn about different varieties that are well suited to the home garden. We will look at different varieties of amaranth, quinoa, chia, wheat, barley, oats, rye, linseed, rice, millet and sorghum, so you can choose the most suitable grains for your situation. This is a hands on workshop, where you'll get to try your hand at threshing and winnowing, using basic tools and equipment suitable for home use.
We will share a delicious lunch prepared using local organic produce and our own grain, then take you on a culinary journey to show you the possibilities of cooking with unusual and heritage grains, with a focus on preparing them for maximum nutrition. The Koanga Institute follows the principles of the Weston A Price diet.
