Jerusalem Artichokes Red(Helianthus tuberosa)NZ HeritageAnother vegetable from the Henry Harrington collection, this time they came to him from Maire Tidy of Te Anau. The red skinned cultivar seems to have survived better in the South Island for some reason. These red skinned artichokes are very different to look at, when compared to the white skinned, more common variety. These ones have far smoother shapes, less knobs on them and are very red skinned. Excellent winter crop that must be cooked to be eaten.
